Our Story

A red-hot passion

About us

Food must be a pleasure, a delight. For us at The Grille, serving food is a passion, as intense as flames cooking a piece of steak.

The Grille on the Drive is an idea of Paul Hugo, an entrepreneur who grew up on Long Island, New York, but chose Florida as his home. Paul has managed some of South Florida’s most successful nightclubs, as well as several restaurants and hospitality establishments. A real estate developer, Paul’s endeavors over 36 years have a history and knack for creating opportunity where there are openings, doing it uniquely and well. This time Paul´s enterprise is backed up by Danel Valero, a Venezuelan young professional who brought a fresh vision to The Grille´s concept.

By the end of 2017, Paul and Danel realized Wilton Manors was lacking a high-standard restaurant in a steakhouse style. That was the initial spark for The Grille. Soon after that, it was decided to remodel the former facilities of Tropics, one of Wilton Manors most beloved establishments for decades, and create there a restaurant which is at the same time new and original but recovers the magic of this location.
